going nuts.....

I made some super-tasty peanut and chocolate biscuits today. Apart from actual peanuts, these tasty morsels also contain peanut butter for a really lovely flavour. The smell when they came out of the oven was divine - I had to sample one as soon as they were cool enough to touch :)




PEANUT BUTTER BISCUITS
(makes 36)

125g butter
3/4 cup soft brown sugar
1/2 cup peanut butter
2 tsp vanilla essence
1 egg
1 3/4 cups plain flour
1 cup raw peanuts
1/2 - 3/4 cup choc bits

1. Preheat oven to 180 degrees and line 2 baking trays with baking paper


2. Cream butter and sugar together until light and creamy


3. Beat in peanut butter, vanilla essence and egg


4. Transfer to a large bowl and sift in flour and add peanuts and choc bits. Stir until combined using a large metal spoon


5. Roll tablespoons of mixture to form balls and flatten slightly on trays - leaving room for spreading.


6. Bake for 15 minutes or until golden brown - enjoy :)
